Adele Henley's Red Beans and Rice: A Cajun Classic Recipe

Who doesn’t love good old-fashioned Cajun Food? I certainly do. In fact, I loved my Mom’s Red Beans and Rice recipe so much that I begged her to teach it to me. This comfort meal of mine is easy to make and can last you for a good number of days!  

 

Ingredients 

  • Cajun Style Andouille Smoke Sausage, either one long sausage or four smaller ones. 

  • 1 stalk of Celery 

  • 1 Onion 

  • 1 Green Bell Pepper 

  • Alternatively, you can buy something called Trinity Mix, which contains the previous three ingredients already pre-diced.  

  • 2-3 cans of Red Beans 

  • Vegetable Oil 

  • Creole Seasoning 

  • Salt & Pepper 

  • 2 cups of white rice 


Instructions 

  • Cut your sausage into evenly sized slices, I’d recommend about three centimeters in length. Then, dice your celery, onion and bell pepper.  

  •  Take a capful and a half of oil and heat it in a pan on the stove on medium heat. Once your oil is heated, add your sausages. Continuously stir the sausages and occasionally flip them until they are browned.  

  • Add your diced vegetables and sauté them with the sausages. Make sure they are soft, but not soggy. Stir them in with the sausages 

  • Next, take a can of red beans and mash them into a paste; this can be done with a fork or a kitchen masher. Add them to the pan. Then, add a can of un-mashed beans to the mix. For larger servings, add two cans of un-mashed beans. Stir in the entire mixture. 

  • Now, we add our seasonings. Add your salt, pepper and Cajun seasoning to your preference. If you want your food to be spicy, add more Cajun seasoning than salt and pepper. 

  • Let the mixture simmer on low heat for 30 minutes.  

  • While your food is simmering, begin preparing the rice by boiling two cups of water in a pot. Once your water is boiled, add the rice and let it cook. 

  • Mix your red beans and sausage with your rice, serve, and enjoy!
