Inconsistent weather or inconsistent baking, you put in so much effort just for things to get too hot. Instead of putting time into something that won’t reward your hard work, try this quick and easy pie recipe. This is for everyone out there who doesn’t want to work with a stubborn oven.

Ingredients:

  • 1 pre-made graham cracker crust

  • 8 oz cream cheese, softened

  • 1 cup powdered sugar

  • 1 teaspoon vanilla extract

  • 1 cup heavy whipping cream (or 1 container whipped topping)

  • Fresh fruit of choice (strawberries, blueberries, peaches, mango or mixed berries)

Instructions:

  1. In a mixing bowl, beat the softened cream cheese until smooth.

  2. Add powdered sugar and vanilla extract, mix until fully combined and creamy.

  3. In a separate bowl, whip the heavy cream until stiff peaks form (skip this step if using whipped topping).

  4. Gently fold the whipped cream into the cream cheese mixture until light and fluffy.

  5. Spread the filling evenly into the graham cracker crust.

  6. Refrigerate for at least 3–4 hours or until firm.

  7. Top with whatever fruit you’d like before serving and enjoy!
